The Land
Festigny is Meunier country. This village on the south bank of the Vallée de la Marne, west of Épernay, sits on heavier clay and limestone than the chalk of the Côte des Blancs, and the frost-prone valley floors and cool pockets have made Pinot Meunier the dependable grape here for generations. That is what makes a Chardonnay from Festigny worth a second look. Christophe Mignon grows it on south- and southwest-facing parcels in Festigny and neighboring Le Breuil, where about 60 centimeters of clay-limestone topsoil sit over layers of chalk and tuffeau. The extra warmth of those exposures and the water-holding clay give Chardonnay from the Vallée de la Marne more body and a rounder, more vinous profile than its Côte des Blancs cousins, which is exactly what a foudre-aged, zero-dosage Champagne needs.
The Wine
The Christophe Mignon ADN de Foudre Chardonnay Brut Nature is 100 percent Chardonnay, hand-harvested from parcels planted in the early 1980s. ADN means DNA, and the line exists to show what large oak foudres do to Mignon's fruit. The base wine spends about a year in foudre, where slow oxygen exchange builds texture without adding obvious wood flavor, then ages for several years on its lees in bottle before disgorgement. It is bottled with no dosage, and Mignon's wines generally skip malolactic fermentation, so the acidity stays vivid. Expect lemon zest, green apple, white flowers and marzipan, then a dry, vinous palate with a fine mousse, toasted almond and a long, saline, slightly creamy finish. Each release is built on a single base year, and recent bottlings have been based on 2019 and 2020.
The People
Christophe Mignon is a fifth-generation vigneron and one of the growers most responsible for taking Pinot Meunier seriously in Champagne. He farms a little over six hectares spread over roughly 30 parcels between Le Breuil and Festigny, vines first planted by his great-grandparents, and works them with his wife, Laurence, and son, Loann. His approach in the vineyard draws on biodynamics, plant-based treatments, homeopathy and geobiology. He has followed the lunar calendar for about 20 years, built some of his own equipment, including a machine that dispenses tiny doses of copper, valerian and garlic tinctures, and keeps roughly one worker per hectare to hold yields down. He is not certified. Chardonnay is a small sideline in an estate that is almost entirely Meunier, which makes this one of the rarer bottles he makes.
Food Pairing
Serve it around 50 degrees in a white wine glass. Lobster bisque or a creamy shellfish chowder is a natural fit, the zero dosage and acidity cutting through cream. Smoked salmon blinis with crème fraîche and chives play salt and smoke against the almond notes. Try a seared pork chop with apples and sage, where the vinous body holds up to real protein. This is the Champagne for people who like their whites with some weight to them and want something no one else at the party has tried.
